Cinnamon Rolls with the Kiddos |
Preheat oven to 425 degrees
Stir Together:
6 cups flour
1/3 cup brown sugar
1 tablespoon baking powder
1/2 tablespoon baking soda
1 teaspoon salt
In separate bowl, mix together:
2 sticks melted butter
2 1/4 cups buttermilk
Make a well with dry ingredients & pour in butter/buttermilk mixture.
Stir & Knead, divide in two, and roll out first bunch on cutting board until about 1/4 inch thick.
Spread with 1/3 stick of softened or melted butter
Sprinkle with cinnamon and white sugar
Sprinkle with pecan bits & press pecans into dough with hands
(Could also add raisins)
Roll up dough and slice into 1 inch sized rolls.
Repeat with 2nd bunch,
All rolls should fit snuggly onto a very large, greased cookie sheet.
Bake at 425 degrees, 20-25 minutes.
Icing
Mix with hand mixer:
1 package (8 oz) of very soft cream cheese
1 1/2 cups powdered sugar
1 cup milk (this may vary, add milk slowly until a medium thick consistency)
Pour icing over rolls as soon as they come out of oven.

2-3 tbl milk

1. Preheat the oven to 425F. Grease an 8-inch square pan. In a large bowl, stir together the flour, brown sugar, baking powder, baking soda, and salt. In a glass measuring cup combine the butter and buttermilk. Make a well in the center of the dry ingredients and pour in the wet ingredients. Fold the mixture together in a few swift strokes, stirring only until combined. Transfer the dough to a lightly-floured work surface and roll to a rectangle about 10x18 inches.
2. Combine the filling ingredients and sprinkle them over the surface of the dough. Starting from the short side, gently roll up the dough. Cut the dough into 2 inch lengths, you should have about 8-9 rolls. Snuggle the rolls together in the prepared dish and bake for 20-25 minutes.
